Method
1.Preheat oven to moderate 180°C.
2.In a large, flameproof, ovenproof dish, combine water, sugar and cinnamon stick. Stir over Low heat until sugar dissolves.
3.Add quince slices, ensuring they are covered with water. Cover pan tightly with foil. Bake 2 1/2 hours, or until quinces are rosy pink and tender. Remove from oven, uncover and set aside to cool slightly. Discard cinnamon.
4.CRUMBLE: Meanwhile, in a food processor. pulse bread until coarse crumbs form. Transfer to a large bowl with remaining ingredients. Mix well.
5.Arrange quince in a 5-cup oven proof dish. Pour over 1/2 cup cooking syrup. Sprinkle evenly with crumble. Bake 15-20 minutes, until crumble is golden and crisp. Serve warm with ice-cream.
Check quinces during cooking and top up with extra water if required.
