Method

1.Heat 1L water, 1 cup sugar and lemon juice in a saucepan on low, stirring until sugar dissolves. Add quince, cover and simmer for 4 hours, until red and tender. Remove from heat and cool in syrup.
2.Preheat oven to 190°C or 170°C fan. Grease and line a 23cm spring form cake pan.
3.Place flour, remaining sugar, baking powder and lemon rind in a bowl. Add combined milk, oil, egg and vanilla and mix to combine. Pour into prepared pan. Bake for 10 minutes. Arrange drained quince in batter. Bake for 30 minutes, until a skewer inserted comes out clean.
4.Brush with quince syrup and cool in pan for 5 minutes. Serve in wedges with cream. Drizzle with extra syrup, if you like.
