Method
1.In a medium saucepan, combine water and sugar. Stir over a medium heat, until sugar dissolves. Bring to boil, without stirring.
2.Add whole peaches and simmer, uncovered, for 8 minutes. Turn heat off and set aside for 5 minutes. Remove peaches from syrup. When cool enough to handle, peel skin off.
3.Return syrup to a medium heat, and simmer 10 minutes to reduce and thicken. Cool for 5 minutes.
4.Place peaches in serving bowls with a portion of raspberries. Pour syrup over and serve with cream.
Add a split vanilla bean or 1 teaspoon of vanilla bean paste to syrup during cooking if desired.
