Method
1.Preheat oven to moderate, 180°C. Lightly grease 6 x 1-cup ramekins.
2.In a bowl, combine plums and apples. Spoon evenly between each dish.
3.Prepare cake mix using eggs, butter, sour cream and milk, following packet instructions. Pour evenly over fruit. Sprinkle with coconut.
4.Arrange on a baking tray and bake for 25-30 minutes until cooked when tested with a skewer (the bottom half of the pudding should still be moist). Serve puddings warm with a dusting of icing sugar and a dollop of thick cream.
makes 6 Use any canned fruit of choice. You could also sprinkle top of puddings with flaked almonds or chopped nuts of your choice.
