Method
1.Slice 1cm off top and bottom of pineapple. Stand upright and slice off skin. Cut fruit lengthways into 8 equal wedges. Set aside.
2.In a saucepan, place palm sugar and water on high heat and bring to boil. Boil for 10 minutes, until syrup thickens.
3.Divide pineapple between dessert plates. Pour syrup over and top with mint sprigs. Serve.
