Method

1.Preheat oven to hot, 200°C. Lightly grease a 23cm loose bottomed flan case.
2.Combine flour and butter in a food processor. Pulse until crumbs form. With motor running, gradually add water, until mixture comes together. Remove and form into a ball. Cover with plastic wrap and rest in fridge for 20 minutes. Roll out pastry between 2 sheets of baking paper to form a large circle 3mm thick.
3.Ease pastry into pan, trim edges. Bake blind for 10 minutes. Remove baking paper, weights and bake for a further 6-8 minutes.
4.FILLING: Meanwhile, in a medium bowl, using an electric mixer, beat butter, sugar and vanilla together until pale and creamy. Add eggs and yolk one at a time, beating well after each addition. Stir flour through. Add remaining ingredients, mixing well. Pour into pastry shell.
5.Bake for 10 minutes. Reduce oven to moderately slow, 160°C and bake a further 35-40 minutes. Cool. Dust with icing sugar and serve in wedges with cream.

Flavour your whipped cream with 2 tablespoons of coffee-flavoured liqueur.
