Method
1.Preheat oven to 180°C. Lightly grease 9 holes of a friand pan.
2.Sift icing sugar into a large bowl. Add ground pecans and flour. Mix in unbeaten egg whites and vanilla. Pour in melted butter, holding back milk solids. Stir lightly to combine.
3.Spoon mixture evenly among recesses until two-thirds full. Bake 15-20 minutes, until golden and cooked when tested. Cool in pan 2 minutes.
4.Meanwhile, in a small saucepan, combine syrup and chopped pecans. Stir over a low heat until bubbling.
5.Transfer friands to a wire rack to cool completely.
6.Spoon hot syrup and nuts over friands to serve. Store in an airtight container.
To make your own ground nuts or meal, place some shelled nuts (with the skins removed, if preferred) in a food processor and pulse them until fine crumbs form.
