Method
1.Preheat oven to hot, 200°C. Lightly grease 8 recesses of a friand or mini loaf pan.
2.In a large bowl, combine icing sugar, almond meal and flour. Add egg-whites and vanilla, mixing lightly. Pour in butter, holding back any solids remaining Mix well and fold apple through.
3.Spoon mixture evenly into recesses until two-thirds full. Decorate with pecan halves.
4.Bake 12-15 minutes, until golden to. touch.
5.Cool in pans 5 minutes before turning onto a wire rack to cool completely. Dust with icing sugar before serving.
Chopped pear or frozen blueberries can be used instead of apples. Store in an airtight container.
