Method
1.Combine wine, sugar, orange rind and juice, cinnamon, bay leaf and 1 cup water in a saucepan, large enough to hold six upright pears. Stir on low heat, until sugar dissolves.
2.Increase heat and bring to boil. Simmer gently for 5 minutes. Lower pears into syrup and simmer for 30 minutes, covered, turning several times. Remove from heat and set aside to cool in syrup.
3.Remove pears. Boil syrup on medium heat until reduced and thickened. Place pears in serving bowls and pour over strained syrup. Garnish with extra bay leaves and serve with cream, if using.
