Method

1.In a medium saucepan, combine sugar, water and ginger; stir on low heat until sugar dissolves. Increase heat to high and bring to a simmer. Add pears; simmer 25-30 minutes, until just tender. Remove pears from syrup and cool.
2.Return syrup to high heat. Boil 10 minutes, until reduced by half. Set aside.
3.Preheat oven to moderate, 180°C. Lightly grease and line a 20 x 30cm slice pan with baking paper.
4.In a small saucepan, combine golden syrup, treacle, butter and brown sugar; stir over low heat until melted.
5.Sift flour and ginger together into a large bowl. Add syrup mixture, sour cream and eggs; stir until smooth. Pour batter into slice pan.
6.Thinly slice pear halves, spread out and arrange over top of batter. Bake 20-25 minutes, or until a skewer inserted into slice comes out clean.
7.Brush cooled slice with reduced syrup. Serve in slices.

For extra flavour and bite, dd a 1/2 teaspoon each ground nutmeg and cinnamon with the flour and fold through about 1/2 cup chopped glace ginger. If pears are softer, reduce the cooking time.
