Method

1.Remove tartlet cases from packaging. Drain peaches; reserve juice. Slice 12 peaches in half lengthwise. Reserve remaining peaches for another use.
2.Place tartlets on a tray. Place custard and reserved juice in a small heavy-based saucepan; cook and stir over moderately low heat until heated.
3.Mix cornflour with 2 tablespoons water in a small bowl; stir into custard. Cook and stir for 1-2 minutes or until mixture boils and thickens.
4.Transfer to a heatproof jug. Cover surface directly with baking paper (this prevents custard forming a skin). Cool slightly. Chill, stirring occasionally, for 15 minutes (custard will thicken on cooling).
5.Spoon cooled custard into tartlet cases. Arrange 2 peach slices on top of custard. Chill for 30 minutes.
6.Carefully brush tartlet tops with jam. Chill for 5 minutes. Serve.

You can use apricots or two fruits instead of peaches. Use leftover peaches in muffins.
