Method
1.Preheat oven to 190°C. Place peaches and banana in base of a 20cm round casserole dish.
2.In a bowl, whisk together eggs and sugar until pale. Gradually mix in flour, then milk and vanilla essence, until smooth.
3.Pour egg mixture over fruit in dish and sprinkle with brown sugar. Bake for 25-30 minutes, until set. Serve dusted with icing sugar and topped with low-fat custard.
A clafoutis puffs on cooking, but will sink as it cools. It’s similar to a custard, so it wobbles when ready.
