Method

1.Preheat oven to 190°C. Place sliced peaches banana in the bases of four 1-cup shallow ovenproof dishes.
2.In a bowl, whisk together eggs and caster sugar until pale. Gradually blend in plain flour, then milk and vanilla extract, until smooth.
3.Pour over fruit and sprinkle with brown sugar. Bake for 20-25 minutes, until set. Serve dusted with icing sugar and dollop of low-fat ice-cream.

This puffs on cooking and will sink slightly as it cools. It is very like a custard, so will be ready when it wobbles slightly.
