Method

1.Combine flour, butter and icing sugar in a food processor; pulse until mixture resembles fine breadcrumbs.
2.Add yolk and water; process until dough just comes together. Knead gently on a lightly floured surface. Shape into a disc. Wrap in plastic wrap; chill 15 minutes.
3.Preheat oven to moderate, 180°C. Lightly grease a 26cm round fluted flan pan with removable base.
4.Roll out pastry between 2 sheets baking paper until 3mm thick. Line pan with pastry; trim excess. Prick base with a fork; chill 15 minutes.
5.Place pan on a baking tray. Bake blind 15 minutes. Remove baking paper and weights or rice; bake 10 minutes, or until base is crisp and golden.
6.Reduce oven to moderately slow, 160°C.
7.To make filling, in a bowl, whisk all ingredients together.
8.Pour filling into pastry case; bake 35-40 minutes, or until filling is just set. Cool, then chill overnight.
9.Dust with icing sugar. Serve in wedges with raspberries and thick cream.
