1.Preheat oven to moderate, 180°C. Line a 12-hole muffin tray with paper patty cases.
2.In a large bowl, combine flour, sugar and coconut. In a jug, mix mashed papaya, diced papaya, oil, milk and eggs together. Add to dry ingredients, mixing to just combine.
3.Spoon mixture evenly among patty cases. Bake 15-20 minutes, until cooked when tested. Transfer to a wire rack to cool completely.
4.To make Frosting; in a medium bowl, using an electric mixer, beat cream cheese, icing sugar and vanilla together until creamy. Spread onto cooled muffins. Top with extra diced papaya and toasted coconut.
