Method

1.Preheat oven to moderate, 180°C. Lightly grease and line a 20cm round cake pan.
2.In a large saucepan, heat butter, sugar and milk for 2-3 minutes until melted and combined.
3.Sift flour, cocoa and soda together into the saucepan (or bowl if using a microwave).
4.Stir in almond meal, eggs and essence until smooth. Pour into prepared pan.
5.Bake for 50-60 minutes until cooked when tested. Cool in pan for 5 minutes before turning onto a wire rack to cool completely.
6.To make the ganache, combine chocolate and cream in a small pan. Stir over low heat for 2-3 minutes until melted and combined. Transfer to a small bowl. Cool until ganache thickens slightly. Spread over cooled cake. Serve in wedges with cream, if liked.
