Method

1.Place 6 x 3/4-cup serving glasses on a tray. Chill until required. Place chocolate in a medium heatproof bowl over a saucepan of simmering water (don’t let-base of bowl touch the water), Cook, stirring, 4-5 minutes or until melted and smooth. Remove from heat. Cool slightly, stir in egg yolks.
2.Using an electric mixer, beat cream in a large bowl until soft peaks form. Using clean beaters, beat egg whites in a medium clean, dry bowl until soft peaks form.
3.Fold melted chocolate into the cream until just combined. Fold egg white and essence into cream mixture until combined. Spoon into prepared glasses.
4.Chill for 4-6 hours or until firm. Top mousse with strawberry. Serve with wafers.
