Mini choc-chip banana loaves

For a delicious morning tea, serve these fluffy banana choc-chip cakes warm with butter.

Method

1.Preheat oven to 180°C (160°C fan-forced). Grease 8-hole (¾-cup/180ml) mini loaf pan; line base and two short sides with baking paper.
2.Combine banana and sugar in large bowl; stir in eggs, butter and buttermilk, then sifted flours and chocolate chips.
3.Spoon mixture into pan holes; bake about 20 minutes. Stand loaves in pan 5 minutes; turn, top-side up, onto wire rack to cool. Serve warm with butter, if you like.

You need about 2 large overripe bananas (460g) to get the required amount of mashed banana.
