Method
1.Preheat oven to 180°C (160°C fan-forced). Lightly grease 2 x 12-hole (2-tablespoon) patty pan trays. Using a 7cm round pastry cutter, cut pastry into 24 rounds. Line holes of prepared trays with pastry rounds.
2.Combine fruit mince and jam in a medium bowl. Place heaped teaspoons of fruit mixture in each pastry case. Brush edges with egg yolk. Using a sharp knife, cut remaining pastry into 6 x 1cm strips.
3.Place 2 strips across tart, then arrange 2 the other way. Pinch edges to seal. Brush with egg yolk. Bake for 15 minutes. Dust lightly with icing sugar to serve.
Sprinkle with flaked almonds before baking. Use a fluted pastry wheel (or sharp knife ) to cut pastry into strips.
