Meringue flower cake

This simple, no bake version of a sponge cake is fun to look at, make and eat!

Ingredients

Method

1.Using a serrated knife, cut cake in half horizontally. Place one half onto a serving plate or cake stand. Spread 1/3 of cream evenly over cake on plate.
2.Wash, hull and dry strawberries. Using a small knife, slice the pointed tip from 3 strawberries and set aside. Thinly slice remaining strawberries. Arrange sliced strawberries over cream on cake. Top with remaining cake.
3.Spread 1 tablespoon of cream on each meringue nest. Place strawberry tips in centre of cream to resemble flower stamens.
4.Using scissors snip each marshmallow crosswise into 2 slices. Shape slightly to resemble flower petals. To make each flower, arrange 5 slices around the strawberry tip on each meringue nest. Spread remaining cream evenly over top of cake.
5.Arrange meringue flowers on cake.
