Method
1.Preheat oven to 110°C. Line two baking trays with baking paper. Using an electric beater, beat eggwhites until soft peaks form. Gradually add caster sugar, beating constantly, until thick and glossy. Gently fold in icing sugar.
2.Shape oval meringues, using a spoon to drop mixture onto prepared trays.
3.Bake for 1 1/2 hours, until crisp and dry. Turn off oven and leave meringues to cool in oven completely. Once cool, store in airtight containers.
Serve meringues with cream, ice-cream or fruit. They’re also delicious on their own with coffee. If you’d like to flavour the meringues as we have, divide the mixture and stir in 1 teaspoon of either Queen Creme de Cafe flavouring, vanilla essence or sifted cocoa.
