Marbled chocolate cream cheese brownie

Method

1.Preheat the oven to 180ºC. Line a 27cm x 18cm tin with baking paper, allowing 2cm of overhang at both long ends.
2.Beat together the cream cheese, caster sugar and vanilla essence until the mixture is soft and creamy. Add the egg and beat for a further 2 minutes. Set aside.
3.Place the chocolate and butter together in a heatproof bowl. Place the bowl over a pot of barely simmering water and stir until the mixture has melted and is smooth. Cool slightly.
4.In another bowl, whisk the caster sugar, eggs and vanilla essence. Add the melted chocolate butter mix and stir until combined. Sieve the flour and fold it into the mixture.
5.Pour three-quarters of the chocolate mixture into the lined tin. Use a teaspoon to dollop the cream cheese mixture evenly over the top. Add the remaining chocolate mixture on top in dollops. Using a skewer, marble the mixtures together.
6.Bake in the preheated oven for 35-40 minutes, or until it is just set in the middle. Leave the brownie to cool in the tin. Once it has cooled, use the paper to lift the brownie out of the tin.
7.Cut the brownie into squares to serve with whipped cream, chocolate sauce and fresh berries.
