Method
1.Preheat oven to hot, 200°C. Lightly brush four 3/4-cup souffle dishes with butter, then dust with sugar. Place on an oven tray.
2.In a medium saucepan, combine extra sugar, water and cream of tartar. Stir over low heat until sugar dissolves. Increase heat to high. Bring to boil. Brush down sides of pan with a wet pastry brush. Boil for 6-8 minutes, without stirring, until mixture turns lightly golden around the edges. Remove from heat and gently swirl pan.
3.In a clean bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually add syrup in a thin steady stream, beating constantly, until thick and glossy. Fold Maltesers through.
4.Spoon mixture evenly among dishes. Bake for 10-12 minutes until puffed and golden. Dust with icing sugar and serve with cream.
