Method

1.Lightly grease an 11 x 34cm loose-based fluted tart pan.
2.Place biscuit pieces in a food processor; process until finely crushed. Add butter; process until well combined.
3.Press biscuit mixture over base of prepared pan; chill while preparing filling.
4.Preheat oven to moderately slow, 160°C.
5.To make filling, in a small bowl, using an electric mixer, beat cream cheese, sugar and zest until smooth. Add eggs, one at a time, beating well after each addition.
6.Pour filling over biscuit base. Bake 40-45 minutes. Turn off oven; prop the door slightly ajar, and leave cheesecake to cool completely.
7.Spread cheesecake with lemon curd. Chill 3 hours or overnight, until set. Serve cut into squares.
