1.Line 6 muffin pan recesses with paper patty cases. Place a biscuit in base of each.
2.Using an electric mixer, beat cream cheese, curd, vanilla and passionfruit together until creamy and smooth. Spoon mixture evenly among cases. Chill for 2 hours or until firm.
3.Drizzle cheesecakes with extra passionfruit pulp, to serve.
It may be necessary to warm each biscuit in the microwave for 15 seconds on high power (100%) to soften them slightly so you’re able to fit them into the base of muffin pans. You will need one passionfruit for about 2 tablespoons of pulp.
