Ingredients

Method

1.Process biscuits until finely crushed. Add butter; process until combined.
2.Press biscuit mixture into base and sides of a 3cm-deep, 22cm (base measurement) round fluted tart pan with removable base; chill 30 minutes.
3.Preheat oven to moderately slow, 160°C (140°C fan-forced).
4.Whisk condensed milk, yolks, cream, zest and juice in a large jug. Pour lime mixture into pie crust. Bake 20-25 minutes, or until filling is just set; remove from oven.
5.Increase oven temperature to very hot, 220°C (200°C fan-forced).
6.Using an electric mixer, beat egg whites in a clean, dry, large bowl until soft peaks form. Add sugar, 1 tablespoon at a time, beating well after each addition, until thick and glossy.
7.Spread egg white mixture over lime filling. Bake 5 minutes, or until meringue is lightly browned. Cool 15 minutes; serve with cream.
