Butter cream
1.In a medium bowl, using electric mixer, beat butter 2-3 minutes until very pale. Beat in icing sugar alternately with milk until smooth and fluffy. Beat in a few drops of colouring to create desired shade.
Jungle waterfall
2.Preheat oven to moderate, 180°C Lightly grease a 20cm square cake pan and a 10cm round pan. Dust with flour, shaking out excess.
3.Prepare cake mixes following packet instructions. Spoon three quarters of the mixture into square pan and remaining mixture into round pan. Smooth surfaces. Bake 30-35 minutes, then remove round cake from oven. Continue cooking square cake for a further 20-25 minutes, until cooked when tested with a skewer. Cool in pans 5 minutes. Transfer to wire racks to cool completely.
4.Meanwhile, knead blue colouring into half fondant until smooth. Divide remaining fondant in halves, colouring one half green and the other brown. Shape green fondant into 4 tree trunks and score to create bark. Insert toothpicks into one end of bananas and press into tops of trunks for branches. Shape brown fondant into small rocks. Allow to set firm.
5.Tint butter cream with green food colouring. Secure square cake onto cake board or plate with a little butter cream. Place round cake on one corner. Cover cakes with buttercream.
6.Roll out blue fondant between 2 sheets of baking paper into a long thin strip. Drape down side of cake to create a waterfall. Arrange rocks on cake. Insert toothpicks into base of trees and press onto cake. Position animals as desired.
