Jelly fishbowl and pufferfish

Delight your kids and any fish enthusiast friends with this fun, creative treat. It looks complicated but is actually so simple you could even get the kids to help make the jelly or cupcakes.

Method

1.Preheat oven to moderate, 180°C. Line a 12-hole muffin tray with foil patty cases.
2.Spoon cake mixture into patty cases until 2/3 full. Bake 15-20 minutes, until cooked when tested. Transfer to a wire rack to cool completely.
3.To make the jelly bowl: Prepare jelly following packet instructions, using lemonade. Add 1-2 drops of blue food colouring to tint light blue. Pour mixture into a 2-litre glass fish bowl or footed vase. Allow to set for at least 4 hours or overnight.
4.Spread butter cream over cakes, forming little spikes. Decorate each with two mint eyes. placing a dot of writing gel in centre. Using scissors, cut out fins and tails from 2 of the strap lollies. Arrange on cupcakes. Cut 5 simple fish shapes from remaining lolly strap.
5.Insert a hot, dry knife into jelly, to make a deep slit. Gently push lolly down the knife surface and into jelly. Remove knife and repeat with remaining lolly fish. Arrange cupcakes on table around jelly bowl.
