Method

1.Preheat oven to 180°C/160°C fan-forced. Grease and line base and sides of a 30 x 20cm (base measurement) slice pan with baking paper, extending paper at long sides for handles. Place a ciean tea-towel on work surface, then a large piece of baking paper on tea-towel. Evenly sprinkle 1/2 cup sugar over baking paper. Set aside.
2.Using an electric mixer, beat eggs and extra sugar in a large bowl for 10 minutes or until mixture has tripled in size, is very light and forms thick ribbons. Fold in flour, in 3 batches, until just combined (don’t overmix). Evenly spread over base of prepared pan. Bake for 10-12 minutes or until light golden and cooked.
3.Remove pan from oven. Immediately turn out sponge onto prepared sugared baking paper. Slowly peel away paper. Evenly drizzle surface with jam. Using the sugared paper and tea-towel as a guide and starting from a short end, gently roll warm sponge. Stand, wrapped in tea-towel, until completely cooled. Transfer to a serving plate. Slice. Serve with cream and strawberries.

When removing paper from cooked sponge, lift slowly or sponge will stick to paper.
