Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease and line two 20cm sandwich pans with baking paper.
2.Sift flour, sugar and baking powder into a medium bowl. Make a well in the centre.
3.In a jug, beat eggs and milk together. Fold into dry ingredients. Pour batter evenly among pans.
4.Bake 12-15 minutes, until sponges spring back when touched lightly with fingertip. Cool in pans 5 minutes before transferring to a wire rack to cool completely.
5.Spread one sponge with jam; then cover with whipped cream. Place second sponge on top. Dust with icing sugar, to serve.
Try placing a paper doily on top of the cake before dusting liberally with icing sugar. Remove carefully to achieve a pretty decoration.
