Individual summer puddings

Light, sweet and fruity, these beautiful mixed berry puddings make the perfect dessert or afternoon treat for a warm Summer's day.

Ingredients

Method

1.Line 4 holes of a Texas muffin pan with plastic wrap.
2.Place berries, water and sugar in a medium saucepan. Stir over a low heat 2-3 minutes, until berries become soft and sugar dissolves. Strain juice into a jug. Reserve pulp.
3.Using round biscuit cutters, cut 4 x 5cm circles and 4 x 6cm circles from the bread. Press the 5cm circles into the base of each recess.
4.Cut remaining bread into wide strips and line sides of recesses. Make sure the sides are completely covered, pressing gently.
5.Divide the berries among the bread cases. Pour reserved syrup evenly over the berries. Press remaining bread circles on top of the berries.
6.Fold edges of plastic wrap over to enclose pudding. Weigh down each pudding by placing a small can on top. Chill overnight.
7.To serve, invert the puddings onto serving plates. Carefully remove the plastic wrap. Serve topped with berries and accompanied with cream.
