Method
1.Preheat oven to 180°C (160°C fan-forced). Line 2 baking trays with baking paper.
2.Combine butter, sugar and honey in a small saucepan over low heat. Stir until sugar dissolves. Remove from heat. Stir in sifted flour and cinnamon. Cool slightly.
3.Roll level tablespoons of mixture into balls. Place on prepared trays, about 10cm apart. Using oiled fingers, flatten to 7cm diameter. Bake, in batches, 8 minutes or until wafers are browned around edge. Cool on tray 1-2 minutes. Working quickly, roll wafers into cone shape. Place, seam-side down, on a wire rack to cool completely. Fill cones with ice-cream and top with sprinkles to serve.
Store wafers in an airtight container for up to 3 days. You can use any variety of honey you prefer.
