Honey puffs (loukoumades)

Apparently awarded along with medals at the ancient Olympics, these honey puffs are certainly winners.

Method

1.Combine the dry yeast, warm milk, caster sugar, egg and melted butter in a large bowl; mix well. Gradually stir in sifted flour; beat until smooth.
2.Cover the bowl and leave to stand in a warm place for about 1.5 hours or until the batter doubles in size and bubbles appear on the surface.
3.Beat batter with a wooden spoon until smooth. Heat deep-frying oil.
4.Deep-fry rounded teaspoons of batter, in batches, in hot oil (170°C), dipping spoon in hot oil before spooning mixture out of bowl. Turn the puffs to brown evenly during frying. Drain puffs on absorbent paper.
5.Divide the puffs among serving plates, drizzle with warmed honey, sprinkle with cinnamon and walnuts.

This recipe is best made just before serving.
