Method

1.Preheat oven to 180C or 160C fan. Grease and line a 23cm springform pan.
2.Combine butter, honey and sugar in a small saucepan on low. Heat, stirring, until a smooth caramel sauce forms. Remove pan from heat and cool sauce for 10 mins.
3.Meanwhile, sift flour, baking powder and cinnamon into a large bowl. Peel, core and dice 2 pears. Add to flour mixture with egg and cooled caramel. Stir until well combined.
4.Pour into prepared pan and smooth surface. Peel and core remaining pear, and thinly slice lengthways. Arrange pear slices over top of batter, overlapping slightly to make a fan pattern. Brush pear with warm jam. Bake for 1 hr, covering with foil if browning too quickly, until a skewer inserted comes out clean.
5.Cool cake in pan and store in an airtight container. Dust with icing sugar before serving.

The honey in this beautiful cake gives it a deep sweetness. Although it takes a while to bake, the cake method only involves melting and stirring.
