Method
1.Heat milk and rice in a heavy-based saucepan on medium, stirring frequently, until simmering. Reduce heat to low. Simmer 30 minutes, stirring occasionally, until rice is tender.
2.Stir in sugar and vanilla extract. Cook another 1 minute. If the pudding needs thickening, mix cornflour in a small bowl with 1 tablespoon water and stir into rice. Spoon rice into small serving bowls and sprinkle with cinnamon. Serve warm or at room temperature.
Small amounts of cinnamon eaten on a regular basis can lower blood sugar levels in diabetes, and it may also reduce cholesterol.
