1.In a large bowl, sift flour, baking powder, soda and nutmeg together. Add butter. Rub in with fingertips, until mixture resembles breadcrumbs.
2.Make a well in the centre of the mixture. Using a fork, lightly mix in buttermilk, to form a wet dough.
3.To make syrup: in a saucepan, combine water and syrup. Bring to boil on medium heat, stirring until combined. Reduce heat to low.
4.Use 2 metal tablespoons to form rounded balls of dough and gently lower into simmering syrup. Cook, covered, 15-20 minutes. Serve dumplings in syrup. Top with ice-cream.
You could use a small ice-cream scoop sprayed with cooking oil to shape the dumplings and gently drop into syrup.
