1.Preheat oven to 160ºC.
2.Grease a shallow ceramic ovenproof dish with butter. It must be large enough so that the pears can fit neatly in one layer. Brush pears with melted butter and sprinkle with the sugar. Place water and the scraped vanilla pod into the base of the dish. Cover the dish with aluminium foil and bake 1 hour, basting with juices every 15 minutes.
3.Check they are tender with a skewer, giving them a little longer in the oven if necessary. Turn the oven up to 200ºC and remove the foil. Cook for a further 15 minutes to brown and slightly caramelise the fruit.
4.Serve warm with whipped cream.
