Method

1.Preheat over to 180°C/160°C fan forced Grease 6 x 3/4 cup ovenproof pudding molds. Line base with baking paper. Using an electric mixer , beat butter and sugar in a medium bowl until combined Add eggs, one by one, beating well after each addition. Stir in flours, almonds meal, milk apple, pineapple and apricot until just combined.
2.Divide mixture evenly among prepared molds; smooth surface. Place in a large roasting pan. Bake for 30-35 minutes or until a skewer inserted at centres comes out clean. set a side for 10 minutes to cool slightly.
3.Meanwhile, dip each cherry two -thirds deep into chocolate .Repeat place on a plate lined with baking paper . Chill for 15 minutes to set.
4.Trim tops from pudding, Run a round-bladed knife inside the rim of each mold. Turn pudding out onto serving plates. Dust with icing sugar . Top With cherries.

Use any combination of glace fruit,egg,ginger or mango. You con use ovenproof tea cups instead of pudding moulds. To reheat puddings,microwave each on High (100%) in 30-second bursts.
