Method
Gingerbread loaves with orange icing
1.Preheat oven to moderate, 180°C. Grease an 8-hole petite loaf pan.
2.In a medium bowl, using an electric mixer, cream butter, sugar and treacle until light and fluffy. Beat in egg.
3.Sift dry ingredients together and fold into creamed mixture alternately with milk. Spoon mixture evenly among pan holes.
4.Bake for 20-25 minutes until cooked when tested. Cool in pan for 5 minutes before turning onto a wire rack to cool completely.
5.Make Orange Icing as per method below.
6.Spread icing over cold loaves. Top with orange rind strips.
Orange icing
7.Sift icing sugar into a heatproof bowl. Stir in juice, butter and rind. Mix until smooth. Place over a pan of gently simmering water and heat, stirring, until mixture is of a spreadable consistency.
