Fruit skewers with caramel yoghurt

We all love a bit of yin and yang in our lives, and our cooking. Sure, caramel isn't the healthiest thing on earth, but accompanied with these fruit skewers the result is absolutely irresistible.

1.Peel and core pineapple, cut pineapple into 2.5cm (1-inch) lengths then crossways into 3cm (1¼-inch) pieces. Segment oranges (600g). Hull strawberries, cut in half crossways. Cut bananas, into 3cm (1¼-inch) slices. Thread pineapple alternately with orange segments, strawberry halves and banana slices onto 12 x 20cm (8-inch) bamboo skewers, place on an oven tray.
2.Stir butter, brown sugar and lemon juice in a small saucepan over low heat until butter melts and sugar dissolves. Pour mixture over skewers, coating all fruit pieces. Cook, in batches, on a heated greased grill plate (or grill or barbecue) for 5 minutes or until browned. Serve skewers with honey yoghurt.

You can swap the fruit for your child’s favourite. If you don’t want to cook the fruit, omit the caramel mixture, and serve the plain fruit skewers with yoghurt.
