1.Combine water and sugar in a small saucepan. Stir over low heat, until sugar has completely dissolved.
2.Add vanilla pod and seeds, cinnamon stick and cardamom pods. Bring to boil without stirring. Reduce heat to medium and simmer for 5 minutes without stirring. Remove from heat and cool. Remove vanilla pod, cinnamon stick and cardamom pods.
3.Place all fruit into a large shallow dish. Pour over cooled syrup. Cover and chill for 1 hour, stirring occasionally, before serving.
Other fruit can be used in this recipe. Try cherries, plums, nectarines, apricots, mangoes or lychees.
