Method

1.Preheat oven to 160°C (140°C fan-forced). Lightly grease a deep, 6-cup ovenproof dish.
2.In a medium frying pan, combine brown sugar and water. Heat on low, stirring, until sugar dissolves.
3.Add apple slices. Simmer, uncovered, 3-5 minutes, until just tender, stirring occasionally. Remove from heat.
4.In a medium saucepan, bring milk, cream and vanilla bean to the boil. Remove from heat. Stand, covered, 5 minutes. Discard vanilla bean.
5.In prepared dish, arrange bread and apple in alternate layers.
6.In a large bowl, whisk together eggs, caster sugar, cinnamon and nutmeg. Gradually beat in warm cream mixture.
7.Strain egg mixture carefully over bread and apple. Place dish in a large baking pan, adding enough boiling water to come halfway up the sides of the dish.
8.Bake 55-60 minutes, until set. Serve with ice-cream or cream, if desired.

When cooked, remove custard from water bath to allow to cool and prevent overcooking. Try pears, bananas or rhubarb in place of apples.
