Method

1.Combine flours and cinnamon in a large bowl. Stir yeast into 1 1/2 cups lukewarm water; stir in oil and sugar. Half-till a kitchen sink with warm tap water. Place yeast mixture into sink; let stand for 5 minutes or until mixture is frothy. Replace water in sink.
2.Pour yeast mixture into flour: stir to make firm dough; knead on a lightly floured surface for 5 minutes or until smooth and elastic. Place dough in a clean, lightly oiled bowl; turn dough to coat in oil. Cover with plastic food wrap; place bowl in water in sink; stand for 1 hour or until dough doubles.
3.Line a baking tray with baking paper. Punch down dough; add dried fruit and walnuts. Knead on a lightly floured surface.
4.Place dough on prepared tray: shape into a 17cm round. Brush with egg: sprinkle with poppy seeds. Cover with plastic food wrap; stand in warm place for 30 minutes.
5.Preheat oven to 200°C/180°C fan forced. Bake for 30-35 minutes until golden and sounds hollow if tapped. Serve with ricotta.

Walnuts provide vitamin E, protein, fibre, polyunsaturated fats, omega-3 fats and folate.
