Method
1.Using a pencil and starting and ending at the stalk, draw a line around the rockmelon. Mark out a 3cm-wide band at the centre of the top half. Using the lines as a guide and a small sharp knife, cut rockmelon as shown above. Remove melon pieces.
2.Peel removed melon pieces; chop flesh. Using a teaspoon, scoop seeds from melon, then scoop melon flesh to create a shell 2cm thick.
3.Combine rockmelon, kiwifruit, strawberry, banana, juice and passion fruit in a large bowl. Spoon fruit mixture into basket; top with ice-cream and serve at once.
Use sugar bananas, if possible, as they don’t discolour. Replace rockmelon with watermelon, honeydew or pineapple.
