Method

1.Beat eggs and sugar in a small bowl with an electric mixer until thick and creamy. Transfer mixture to a large bowl, stir in sifted flours and salt, in two batches. Knead dough on a floured surface until smooth and no longer sticky. Wrap in plastic wrap, stand for 20 minutes.
2.Divide dough into 16 portions. Roll each portion on a floured surface into 12cm (4¾-inch) rounds.
3.Heat oil in a large frying pan, shallow-fry pastries, one at a time, turning once, until browned lightly. Drain on absorbent paper.
4.Toss hot pastries in combined extra sugar and cinnamon. Serve warm or cold.
