Method

1.Preheat oven to 200°C (180°C fan-forced). Grease a 1.5-litre (6-cup) rectangular baking dish. Place on a baking tray.
2.Scatter half the macadamias and half the dates over base of prepared dish. Roughly tear bread, then scatter over nuts in dish. Top with remaining macadamias and dates.
3.Whisk sugar, eggs, vanilla, cream and milk in a jug. Pour milk mixture over bread. Stand for 5 minutes or until bread absorbs most of mixture. Bake for 25 minutes or until just set at centre. Stand in dish for 5 minutes.
4.Combine zest and custard in a jug. Dust pudding with icing sugar. Serve slices with orange custard.

Use sultanas, raisins or dried dates instead of fresh figs.
