Method

1.Preheat oven to 180°C. Lightly brush 4 ramekins with butter. Dust with sugar, shaking out any excess.
2.In a heatproof bowl over a saucepan of simmering water, place chocolate and extra butter. Stir on low heat until melted and smooth. Remove from heat. Cool slightly. Whisk egg-yolks into mixture, one at a time, until combined. Set aside to cool.
3.In a separate bowl, beat egg-whites until soft peaks form. Gradually add extra sugar, 1 teaspoon at a time, beating 4-5 minutes until thick and glossy.
4.Fold one-third of egg-whites through the chocolate mixture until incorporated. Gently fold in the remaining whites, until just combined.
5.Spoon mixture evenly among ramekins. Place on baking tray. Bake 18-20 minutes, until puffed and firm. Serve immediately with cream.

Make sure you don’t open the oven door to check on your souffles during cooking or they will sink before they have cooked through.
