Method

1.Combine rice, milk, 1/4 cup sugar, cinnamon and zest in a heavy-based medium saucepan over low heat. Bring to a simmer. Cook and stir for 25 minutes or until rice is soft and liquid creamy. Using tongs, remove zest and cinnamon.
2.In a medium saucepan, combine rhubarb, honey, remaining sugar and juice. Stir over low heat until sugar dissolves. Cover; simmer 10-12 minutes or until rhubarb is tender.
3.Spoon rice into bowls. Top with rhubarb then sprinkle with nuts.
