Method

1.Place passionfruit pulp, sugar and egg white in the bowl of electric mixer. Beat on high for 10 minutes, until mixture is thick and frothy.
2.Place sour cream in a large bowl. Gradually fold in the passionfruit mixture until smooth.
3.Pour into a 10 x 20cm loaf pan. Cover with plastic wrap. Freeze overnight or until firm. Serve sliced or in scoops with wafers.

The passionfruit mixture spatters quite a lot during beating so cover the bowl with a tea towel. To ensure even distribution of the passionfruit seeds, lightly stir the mixture occasionally as if freezes.
