Method
1.Preheat oven to 180°C. Grease 8 x 1-cup ovenproof moulds.
2.Using an electric beater, cream butter and sugar together until pale and creamy. Add eggs, one at a time, beating well after each addition. Fold in flour with a pinch of salt, alternating with milk, beginning and ending with flour.
3.Spoon mixture into prepared moulds and bake for 25 minutes, until a skewer inserted comes out clean. Cool in moulds for 5 minutes, then turn out onto a wire rack to cool completely.
4.COFFEE SYRUP: Meanwhile, heat sugar with 1 cup of water in a saucepan on low heat until sugar dissolves. Increase heat and boil for 3 minutes. Remove from heat and stir in coffee and rum. Cool.
5.Return cakes to moulds and pour half of Coffee Syrup over cakes. Chill, overnight, if possible, until ready to serve. Turn out onto serving plates, top with almonds and drizzle with remaining Coffee Syrup.
